Letter from the Farm

Free Bird Farm’s crops got the rain they greatly needed. With it a cool stretch arrived, and it’s now beginning to feel and look a lot like fall.
Fortunately, we still have a number of weeks left in the CSA and look forward to all of the cool weather crops that go with it, like this week’s greens mix.
This mix includes Green Mustard, Red Mustard, Kale, Tatsoi, and Hon Tsai Tai.
These greens have a kick to them. They’re young enough to be enjoyed as a salad or on a sandwich. They can also be quickly stir-fried or sautéed.
Serve with creamy polenta and roasted “salad” tomatoes or smashed Yukon golds.

CSA Member Rachel Greenspan has a wonderful nutrition site and food blog (Whole Greens Nutrition) and has been posting recipes using our CSA produce. Check her site for other great ideas as well! Check out one of her recent recipes below!

Yield: ~3 cups

Hands on time: 10 min

Total time: 20 min

1 pound small red or yellow potatoes (I find the red potatoes to be creamier)

2 tbsp mayo (I like vegan JustMayo brand)

2 tbsp grainy mustard

1 splash white vinegar

1 tbsp dill, chopped - plus extra pinches for garnish

2 tbsp spring onion, sliced

1 tbsp capers

Spices: s+p to taste

Boil water to cook potatoes. Either steam or boil potatoes - cooking time will vary depending on cooking method.

Potatoes are ready when easily pierced by fork. Drain and let cool.

Whip up dressing using remaining ingredients.

Cut potatoes into bite size pieces.

Mix with potatoes, garnish with extra dill, and serve!
