Get Fresh this Thanksgiving!

The holidays are here!  Thanksgiving is just two days away, and if you’re like us, you could use a quick easy dish to help complete your big meal.  We’ve come to your rescue in this week’s edition of the Olivia’s Observer.

The less time you spend in the kitchen, the more you can spend with your family.  Here’s a quick and simple butternut squash recipe to round out your Thanksgiving meal with freshness and ease.

Roasted Butternut Squash with Thyme

1 package of Olivia's cubed butternut squash
1/4 cup olive oil 
Salt and pepper to taste
2 tablespoons fresh thyme

Preheat oven to 350 degrees
In a casserole dish or baking sheet, add the butternut squash and toss with the olive oil, salt and pepper. Top with thyme. Bake for 40 minutes, stirring the squash once after 20 minutes of cooking. 

We weren’t kidding were we?  Simple as can be, healthy and so delicious!
