Do you ever come across a recipe that sounds delicious, one where each successive ingredient makes it more and more appetizing and then…boom, the recipe calls for cabbage?

Don’t get us wrong. It’s not that we're anti-cabbage; we're just pro-kale. Another member of the Brassica family, kale is cabbage's more sophisticated sibling. And as it happens, the role cabbage plays can often be filled by the much more nutritious and delicious kale. This superstar stand-in has over 15 times the amount of Vitamin A, over four times the amount of iron and a similarly low caloric value.

Check out three of our favorite ways to bring kale in and kick cabbage out!

1. Instead of cabbage coleslaw, try kaleslaw. Just chop up the same amount of kale in place of your cabbage, adding some citrus to help the leaves soften, and move along just as you would coleslaw! Did we mention Greek yogurt in lieu of mayonnaise makes this one just a little more special?
2. Instead of traditional dumplings, try kale and edamame dumplings. Dumplings are a treat and making them takes a little time and patience. So why not make the best version ever? Swap in kale for cabbage, edamame for pork and combine with your usual ginger and cilantro. You’ll have a vitamin-packed treat you can be really proud to share!
3. Instead of basil-only pesto, try kale-charged pesto. Add two cups of chopped kale to your standard pesto recipe, keeping an eye on the texture which may call for a dash or two more olive oil, and you’ve got the wunderkind version of the classic.
Give these swaps a whirl and see if you don’t mind telling cabbage to wait until another time.
