It’s Valentine’s Day Part 2 coming your way! Last week we shared some ideas for giving back in the spirit of the heart holiday, and today we want to talk about the food of love.

Mashed potatoes, smashed potatoes. Yummy, no question, but even a classic can be improved upon. Paired with a perfectly cooked piece of steak, chicken or fish, mashed butternut squash has the classic, creamy texture of traditional mashed potatoes but the vitamins and nutrients of a true superfood. Lady and the Tramp got it mostly right, but let’s be honest, the whole sharing a single piece of spaghetti is no easy task. Instead of spaghetti air tricks, what about a swap trick? Spaghetti squash is packed with every single essential mineral and nearly every essential vitamin. This one is a no-brainer. So swap that standard noodle for a spaghetti squash noodle, add some greens and turkey sausage, and presto! Dinner is served.
Dinner and a movie? Yes, please! But can we do better than the old standby of popcorn? Instead of packaged, buttered and salted popcorn, let’s eliminate the unnecessary fat and calories and opt for a crunchy take on spinach instead! Simply open a bag of spinach, pat them dry, and pop them in the oven. Once they start to crisp, take them out, sprinkle some salt and seasonings, and you’ve got a snack that pairs well with whatever movie gets the green light.
