Kohl-ra-what?

Don’t know what to do with kohlrabi? Well if you still have them (and you just may as they store for a long time) and some carrots and red cabbage too, here is a quick, delicious and healthy recipe I made last week! Please note that I ended up using only @1/2 the dressing it called for and it was still fabulous. I made it all but only added to our taste.  In addition, it states grated for but instead of using a cheese grater, I used my mandolin for most of it.

Carmelized Corn and Mint

Personally, I love dishes that only have a few ingredients, so this week, I am sharing something you may have never had before!

INGREDIENTS
4 to 5 cups fresh corn kernels, white or yellow (from about 12 cobs), or two 16-ounce bags frozen white corn
1 stick (4 ounces) unsalted butter
½ cup chopped fresh mint
Salt
