Sizzling Summer Newsletter

I hope everyone had a fabulous 4th of July long weekend. We once again thank those who serve or have served so that we can continue to celebrate our independence.

I know I sound like a broken record but where does the time go. I looked in Sunday’s newspaper only to see “Back to School” sales being advertised.  We are in those “Dog Days of Summer” for sure.

With our hot and humid summer upon us, a lot of us turn our thoughts to being in, on or around the water. Those water toys, including power boats, sailboats and personal watercraft provide lots of fun and an opportunity to cool down, but they also pose an exposure to loss, including material losses and physical injury losses. Insurance Resources can provide you with the proper coverage for all your watercraft, including physical damage protection, liability protection and even protection against uninsured boaters.

Enjoy the rest of your summer, but before you head out on the water, contact us to make sure you are protected!

Insurance Resources Eats

Recipes from our employee's kitchen
Patti's Butter Pecan Ice Cream

Caramelized Pecans
2 teaspoons butter
1 tablespoon butter
1⁄2 teaspoon salt
3⁄4 cup pecans, chopped

Combine all the ingredients at once in a small non-stick frying pan over low heat, heat until pecans are lightly toasted. Remove from heat and let cool. Resist nibbling on.

Ice Cream Base
1⁄4 cup sugar, divided
1⁄2 cup brown sugar, packed
2 tablespoons cornstarch
1⁄2 cup maple syrup
2 eggs, beaten
2 1⁄2 cups of milk
2 cups heavy whipping cream
1 tablespoon vanilla paste

Combine sugars, cornstarch, syrup and eggs in the top of a double boiler. Carefully add milk. Cook over boiling water until mixture thickens. Remove from heat and chill for at least two hours or overnight.
Later, stir in toasted pecans, cream and vanilla.

Place in ice cream freezer and freeze according to manufacturer’s directions. Allow ice cream to freeze or firm up in freezer for at least an hour before serving.

**For quick ice cream use the ice cream cups, bowls or freezer pops from ZOKU and follow directions. You can keep your ice cream at a soft serve consistency or completely frozen.
