Maleku Single Estate Chocolate is now available!
 

Hi friend and chocolate lover!

The first days and month of 2017 have been exciting and really thrilling - we have spent a lot of time studying and learning about our own plantation, the trees we inherited and the varieties we are working with right now. The majority of our cacao has been planted by the previous owner, and about 80% of the trees are hybrids, planted from seed and thus really unknown in terms of the genetics within the trees and the cacao we get from it.

We have harvested four times so far and we have been fermenting and drying, roasting and grinding, and we now can present - tadaaa! - our very first batches of our Single Estate Blue Valley chocolate.

My opinion? A great start. We have been positively surprised wit the smoothness and low acidity of the first batches due to great genetics, but also a thorough and patient fermentation followed up by a gentle roast and a long refining and conching time in our melangeurs. Fruity, caramel-like, hazelnuts - the first notes to hit your nose and palate with our 75% and 90% dark chocolate bars. We have also introduced a dark milk chocolate with just enough smoothness to accommodate the lovers of great milk chocolate, without compromising on a pure cacao sensation.



The immediate future for our Blue Valley cacao concerns trimming the trees and getting them ready for the rainy season in May. We will also start our nursery in March, so we can plant new root-stock and graft it with great flavor cacao varieties we choose from local hybrids and clones. Some of the hybrids we have identified as well-producing and of excellent quality will be grafted onto existing trees, so we can present our own "Maleku" varieties in the near future and make them a part of our original and signature blends.

So far we have a limited amount of cacao and chocolate from our Blue Valley property, so if you want to enjoy these historic batches, you will need to place your order a.s.a.p. - we will be happy to ship and can process your payments through PayPal. If and when we run out of our own cacao for current orders we have prepared to offer you all a line of similar high quality "Upala Blend" single origin chocolate made from cacao of the region which we have carefully selected from proven cacao growers.

Last note: February 25th I will open the Copenhagen Chocolate Festival with the tale of Maleku Chocolate, how it started and how we have come as far as we have. For those of you who will be around I hope you will come to Forum and say hi!
