Vegetarian Menu


Hi there

How times have changed! Years ago we would only give real quality attention to the meat course, but now vegetarian mains are winning the Oscars! We have put together a trendy Vegetarian Buffet menu for you. I served some of the dishes for various meals to family and friends over the weekend. They were hugely impressed with the Flamegrilled Beetroot Tart with Goat's Milk Cheese and absolutely loved the Hummus which they enjoyed on mini pita breads with drinks and even at breakfast spread on toast. The Parsley Risotto was a quick and economical lunch, which my brother enjoyed making.

This robust onion flavoured hummus has much more appetite appeal than the bland cotton-wool variety sold in the supermarkets. I love it because it gets better and better with every day in the fridge.

Looks impressive and is dead easy to make if you use ready made all butter Puff Pastry, a pack of our Roasted Beetroot and a roll of honey sweetened goat’s milk cheese. The delicious ruby red vinaigrette from the beetroot is slightly thickened and reduced to a glaze. Impress with less!

These Bulgar Grain bowls with marinated tofu and a blend of colourful vegetables are a treat and have great appetite appeal because we infused everything with real flavour.

Old but not yet cold. We gave this traditional favourite a very mild curry twist and voila! The carrot haters were asking for seconds.

Beetroot is a good source of folate, it is rich in potassium and contains some Vitamin C and roughage. The leafy tops are rich in beta carotene, calcium and iron. In fact, in ancient civilisations only the leaves were eaten, the roots were used in medicines.

Cook beetroot tops like spinach.

It is interesting to note that we use dried beetroot powder in our Red Velvet Cake.
