Time to Travel

Hi there

Graham and I did a short trip to Italy and the Netherlands last month. Our stay in Italy (Parma) was unfortunately very brief.

In Parma, Graham investigated new equipment and I had a chance to browse the food shops and markets. The equipment suppliers treated us to a delicious traditional Italian dinner, starting with Parma ham and salamis from the region followed by butter drenched pumpkin and spinach ravioli and ending with Tiramisu. The hotel we stayed in was in the grand old Italian style: marble floors, impossibly high ceilings, magnificent light fittings, etc.

Our menu this month is inspired by cooking from the Parma region.

Windmills are part and parcel of the Dutch landscape. The wind blows with a vengeance along the coastline. You can see how windblown we are here!


Netherlands

Gardens

We had three days in the Netherlands. A wonderful time for flowers.

This photo was taken in a little town outside Amsterdam called 'Broek on Waterland'. Well worth a visit. There is a beautiful historical Dutch Reformed Church in the village. All the houses and gardens are immaculately maintained.

Pink Hydrangeas in full bloom. The Dutch definitely have green fingers.

Garden Netherlands

Trees, as you know already, are one of my great loves. This tree in the Rijks Museum Park in Amsterdam is more than 100 years old.

The formal clipped hedges in this garden are the perfect frame for the colourful annuals massed inside the beds.

Food News

smoked eel

In Volendam, another village, there is a world famous artisan family who have been smoking eels for five generations, since 1856. The very best that I have ever tasted. We brought this pack back with us and had it as a starter on melba toast and finally added the last few delicious morsels to a simple pasta.

A mind blowing eating experience was at Sazanka, a Japenese Teriyaki Michelin starred restaurant in Amsterdam. Very expensive but a once in a lifetime experience. We also enjoyed an Indonesian Rijs tafel at Blauw restaurant.

Meatballs with Roast Mushroom Sauce

We tested and re-tested this recipe five times with small variations. We started with meat on the bone, cut into cubes and minced in a food processor. We then used shop bought good quality lean mince (equally good). Initially we soaked the breadcrumbs in milk and then tried another variation with beef stock. The final recipe that we are sharing is refined and all the gremlins have been sorted out.
