Better Late Than Never!

Even the best-laid plans to put out a newsletter on the first of the month sometimes fall by the wayside. Family commitments kept me from putting this together. I hope you will find it worth the wait.

My 3 year-old grandson loves to help grandma in the kitchen and is especially fond of baking. When I bake alone, I usually bake from scratch. However, with a small child underfoot, I find it much easier to use mixes. Here is a quick and easy cake we made for his sister's tenth birthday!
Mississippi Mud Cake

1 - Devils food cake mix
2 cups miniature marshmallows
1 - can fudge frosting
1 Tablespoon coffee cream or milk

  • Prepare cake according to package directions and bake in an oblong 13x9 sheet pan
  • Remove from oven when done and spread marshmallows over the top of the cake, return to oven for 2-3 minutes until melted slightly.(Oven can be turned off at this time.)
  • While marshmallows are melting, prepare frosting by scooping into a microwave safe bowl, add cream/milk and heat in microwave for 45 seconds. Stir to combine.
  • Remove cake from oven and pour melted frosting over cake.
  • Let set at room temperature until cake cools (1-2 hrs). DO NOT REFRIGERATE. This will harden the marshmallow cream.
