This tradition refers to a distant myth that if pancakes were not made the day of Candlemas, the wheat would get diseases for the year. There is still nowadays a symbol linked to the preparation of pancakes. The crepes are flipped with the right hand while holding a (gold) coin in the left hand. In order to enjoy prosperity throughout the year (and an abundant harvest for the farmers), the pancake has to land properly in the pan and then must be kept on the top of a cupboard until next year. In Canada, this day is celebrated as Groundhog Day. According to folklore, if it is cloudy when a groundhog emerges from its burrow on this day, then spring will come early; if it is sunny, the groundhog will supposedly see its shadow and retreat back into its burrow, and the winter weather will persist for six more weeks.
